Oatmeal, Cinnamon and Date Cookies
- 2 cups whole wheat flour
- 1 cup large flake rolled oats
- 1 tsp. baking soda
- 1/2 tsp. Magic Baking Powder
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 1 cup non-hydrogenated margarine
- 1 cup packed brown sugar
- 1/4 cup granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 3/4 cup chopped pitted dates
- Heat oven to 375F.
- Combine first 6 ingredients.
- Beat margarine and sugars in large bowl with mixer until light and fluffy.
- Add egg and vanilla; mix well.
- Gradually beat in flour mixture.
- Add dates; mix well.
- Drop heaping tablespoonfuls of dough, 2 inches apart, onto parchment-covered baking sheets.
- Bake 10 min.
- or until lightly browned.
- Cool 1 min.
- Remove to wire racks; cool completely.
