Rum and Brown SugarGlazed Shrimp

  1. In a small sauce pot, combine the lime juice, rum and sugar and bring to a simmer, then reduce heat.
  2. Add the the cornstarch mixed with water and bring back to a simmer, while continuously whisking.
  3. Skewer the shrimp, alternating with the mango and pineapples.
  4. Season with salt and pepper.
  5. Brush heavily with the glaze.
  6. Place the skewers on a medium high grill, for 2 to 3 minutes on each side or until the shrimp are cooked through.
  7. Serve as skewers or over top of salad greens.
