Avocado Aioli

  1. Halve the avocados and scoop the flesh into a bowl.
  2. Add the lime juice and garlic.
  3. Mash well.
  4. Scrape into a food processor and puree.
  5. With the machine on, drizzle in the oil.
  6. Scrape the puree into a bow.
  7. Fold in the coriander and season with salt and pepper.
  8. Refrigerate for up to 2 hours, then serve with dipping bread or vegetables.
