Seven Grain Bread Recipe

  1. Pour boiling water over seven-grain cereal; add in butter, brown sugar and salt.
  2. Combine the yeast and hot water, when dissolved add in to cereal mix.
  3. Add in Large eggs and 2 c. whole wheat flour, beat well.
  4. Add in remaining whole wheat flour.
  5. Use as much unbleached flour as you can fold in with a spoon.
  6. Use the rest for kneading to make a moderately stiff dough which is smooth and elastic.
  7. Put in a greased bowl, cover and let rise till doubled.
  8. Punch down and divide dough in half.
  9. Let rest 10 min.
  10. Shape into loaves; place in pans and let rise till nearly doubled, brush tops with water and sprinkle with sesame or possibly poppy seeds.
  11. Bake at 375 degrees for 30 to 35 min.
