Family Favorite Vanilla, Coconut Pecan Oatmeal Cookies
- 12 cup butter, softened
- 13 cup shortening
- 12 tablespoon water
- 12 cup milk
- 12 cup brown sugar (not packed)
- 14 cup granulated sugar
- 2 eggs
- 1 12 tablespoons real vanilla
- 2 cups flour
- 1 teaspoon baking powder (not soda)
- 12 teaspoon salt
- 2 cups oatmeal
- 1 cup shredded coconut
- 12 cup chopped pecans
- 34 cup chocolate chips (optional)
- Preheat oven to 350 degrees.
- Cream together the butter, shortening, water, milk, sugars, vanilla and eggs until smooth.
- In a separate bowl, mix the flour, oatmeal, baking powder, and salt.
- Add dry ingredients in two separate batches to the creamed mixture; blending well after each.
- Stir in the coconut, pecans and optional chocolate chips if so desired.
- Drop by tablespoonfuls about 2 inches apart and bake roughly 13-14 minutes or until cookies no longer look wet.
- Cool slightly before moving onto a cooling rack.
