Heart Healthy Chicken Stir-Fry
- 1 lb. boneless chicken breast in bite size pieces
- 2 Tbsp. canola oil
- 1 Tbsp. margarine
- Lawry's seasoned salt
- 1 (8 oz.) can Chun King sliced water chestnuts
- 1 (8 3/4 oz.) can Del Monte whole kernel corn
- 1 (8 1/2 oz.) can Del Monte peas and carrots
- 2 c. Minute rice, cooked according to pkg. directions
- lite soy sauce
- Heat oil and margarine in pan on top of stove over medium heat; add chicken pieces and sprinkle with Lawry's seasoned salt to taste.
- Stir-fry until done.
- While chicken is cooking, drain the liquid from each vegetable and place vegetables in microwave-safe casserole dish and heat them in microwave for 3 minutes, then drain the accumulated liquid.
- Add the vegetable mixture to the cooked rice.
- Serve the cooked chicken over the vegetable and rice mixture.
- Add soy sauce to taste.
- Really quick meal.
