Blueberry Maple Syrup

  1. Combine the berries, sugar, and 1/2 cup water in a saucepan and cook over medium heat until sugar is dissolved.
  2. Remove from heat.
  3. Dissolve the cornstarch in 1 tablespoon cold water.
  4. Whisk into the berries.
  5. Bring to a boil and let boil while whisking for 2 minutes.
  6. Add the lemon juice.
  7. Strain the syrup through a sieve into a bowl, pressing the berries with a spatula to extract all the liquid.
  8. Discard the solids and stir in the maple syrup.Nutritional information is based on a 1-tablespoon serving.
