Aunt Nora's Mock Lobster Recipe
- 2 lb mixed grnd beef, veal and pork
- 2 x Large eggs, lightly beaten
- 2 c. bread crumbs
- 1 c. minced onion
- 1/2 c. minced green pepper
- 1/4 c. lowfat milk
- 1/4 c. horseradish
- 1 tsp dry mustard
- 2 tsp salt
- 1/8 tsp freshly grnd pepper
- 1/4 c. ketchup, more for garnish
- 8 x strips bacon.
- Preheat the oven to 350 degrees.
- In a bowl, combine everything but the bacon.
- Mix, using your hands, till well blended.
- In a roasting pan or possibly iron skillet, shape the mix into a lobster.
- With the ketchup, either rub a thin coating all over the lobster or possibly make lines for visual appeal.
- Wrap the bacon slices across the tail or possibly at joints, so everyone gets a little.
- Bake for 50 to 60 min, covering the ''claws'' with foil after 40 min so which they do not dry out.
- Yield: 8 servings.
