Chocolate Chip Tofookie
- 2 12 cups flour
- 1 teaspoon baking powder
- 12 teaspoon salt
- 12 cup margarine
- 12 cup shortening
- 1 12 cups brown sugar, firmly packed
- 2 teaspoons vanilla
- 12 cup silken tofu, whipped
- 1 (12 ounce) package semisweet vegan chocolate chips
- Preheat oven to 375F.
- In a medium bowl, mix flour, baking powder and salt.
- Set aside.
- In a separate large mixing bowl, beat together margarine and shortening with mixer until creamy and smooth.
- Add vanilla and brown sugar, and beat until smooth.
- Add whipped tofu and beat until well-blended.
- Continue beating while adding flour mixture until a big ball of smooth batter forms.
- Mix in chocolate chips with a wooden spoon.
- Drop batter with a tablespoon onto cookie sheet, about two inches apart.
- Bake 8-10 minutes until cookies begin to brown lightly.
- Cool on cookie sheet 5 minutes before moving to cooling rack.
