Sweet and Tart Pineapple Fritters

  1. Dry pineapple slices between paper towels.
  2. Prepare the batter: Stir together flour, cornstarch, sugar, and baking powder in a small bowl.
  3. Mix in water slowly until smooth.
  4. Refrigerate 20 minutes.
  5. Heat 3 inches (5 cm) of oil in a skillet or wok to 360F (185C) or until dough dropped in comes back up.
  6. Coat pineapple rings with batter and slide into oil.
  7. Cook rings 2 minutes on each side or until browned.
  8. Take out with slotted spoon and drain on a paper-lined plate.
  9. Continue cooking rings until all are cooked.
  10. Test for heat level between each batch.
  11. Serve immediately, sprinkled with wine, sugar, and sesame seeds.
