Chicken With Tarragon Sandwiches

  1. Tear or chop the chicken into small pieces and put into a bowl.
  2. Add the tarragon, mayonnaise and creme fraiche.
  3. Season with salt and pepper and squeeze in the lemon juice.
  4. Fill the rolls with the chicken and mayonnaise mixture.
  5. If using regular-sized rolls, cut them into 4 to serve.
