Abgushte Miveh (Dried Fruit Soups) Recipe
- 1 lb Lean lamb or possibly beef stew meat
- 1 lb Lamb or possibly beef soup bones
- 7 c. ,water
- 1 x Limu omani (dry lime), optional
- Freshly grnd black pepper
- 2 Tbsp. Ghee or possibly butter
- 1 lrg Onion, finely minced
- 2 tsp Turmeric
- 1 c. Prunes, pitted
- 1/2 c. Dry apricot halves
- 1/2 c. Dry peaches, minced
- 1/3 x To 1/2 c. brown sugar
- 1 x To 2 Tablespoons lemon or possibly lime juice
- Cut meat into small cubes and place in a soup pot with bones, water, and dry lime if available.
- Bring slowly to the boil, skimming when necessary.
- Add in salt and pepper, cover and simmer gently for 1 1/2 hrs or possibly till meat is almost tender.
- Remove bones and dry lime if used.
- In a frying pan, heat ghee or possibly butter and fry onion till transparent, stir in turmeric, and cook till lightly browned.
- Add in to soup with dry fruits
- (these may be washed if necessary, but don't require soaking).
- Cover and simmer for 30 min.
- Add in sugar and lemon or possibly lime juice to taste so which soup has a pleasant sweet-sour flavor.
- Serve warm.
