Chicken and Olive One Pot Roast
- 2 tablespoons olive oil
- 2 red onions, peeled and sliced
- 10 ounces cherry tomatoes
- 4 garlic cloves, peeled
- 4 boneless skinless chicken breasts, cut into 3 pieces
- 14 ounces cannellini beans
- 2 ounces black olives
- 1 lemon, zest
- 2 tablespoons parsley, chopped
- Heat the oven to 350F.
- Place half the oil, the onions, tomatoes and garlic in a roasting tin and cook in the oven for 15 minutes.
- Fry the chicken in the rest of the oil for 2-3 mins until golden.
- Add to the onions, cook for 10 mins then add the beans, olives and zest.
- Return to the oven for 5 minutes.
- Serve sprinkled with parsley.
