Babicka'S Babovka
- grated rind from a lemon or an orange
- 1/4 lb. butter
- 1 1/2 c. sugar
- 4 egg yolks
- 1 tsp. vanilla
- 2 c. flour, sifted 5 times
- 2 tsp. baking powder
- 1 c. milk
- 1/4 tsp. salt
- 4 egg whites, beaten
- chopped walnuts (optional)
- Grate rind into the bottom of the mixing bowl.
- Cream with sugar and butter.
- Separate eggs.
- Add egg yolks and vanilla to mixture.
- Sift salt and baking powder into flour.
- The five flour siftings are essential for the resultant final texture.
- Then alternately combine sifted flour and milk with the creamed mixture. Beat egg whites and gently cut them in.
- Grease and flour a Bundt pan.
- Hoska crumbs may also be sprinkled in.
- Chopped walnuts if desired are then sprinkled in.
- Gently pour in the mixture and bake for about 45 minutes or until done in a 375u0b0 oven.
- Cool before removing from pan to serve.
