Texas Beef Skillet
- 1 lb. ground beef
- 3/4 c. chopped onion
- 1 (16 oz.) can tomatoes, cut up
- 1 (15 1/2 oz.) can red kidney beans
- 1/2 c. quick cooking rice
- 1/2 c. water
- 3 Tbsp. chopped green pepper
- 1/2 tsp. salt
- 1 1/2 tsp. chili powder
- 1/2 tsp. garlic salt
- 3/4 c. shredded American cheese (3 oz.)
- corn chips, crushed
- In a skillet, cook ground beef and onion until meat is browned and onion is tender.
- Drain off fat.
- Stir in the undrained tomatoes, beans, rice, water, green pepper, chili powder, salt and garlic salt.
- Reduce heat.
- Simmer covered for 20 minutes, stirring occasionally.
- Top with cheese.
- Cover and heat about 3 minutes or until cheese melts.
- Sprinkle corn chips around edge. Serves 6.
