Turkey Vegetable Burgers

  1. Process crackers into fine crumbs.
  2. Preheat oven to 375F (190C).
  3. Saute onion and garlic in 1 tablespoon water over med-high heat for 3 to 5 minutes until water evaporates.
  4. Add celery and saute, stirring, 3 minutes to soften.
  5. If vegetables begin to stick, add additional water as needed.
  6. In large bowl, combine turkey meat, sauteed vegetables, onion powder, mustard, pepper, egg white, nutmeg, crumbs and parsley.
  7. Mix well.
  8. Form turkey mixture into patties and place on baking sheet or shallow pan.
