Double-Fruit Parfaits
- 1/2 cup boiling water
- 1 pkg. (10 g) Jell-O No Sugar Added Raspberry Jelly Powder
- cold water
- 1/2 cup ice cubes
- 3/4 cup thawed Cool Whip Light Whipped Topping
- 1 cup fresh raspberries, divided
- 1/4 cup fresh blueberries, divided
- 3 Peek Freans Lifestyle Selections Shortcake Biscuit, crushed (about 1/3 cup)
- Add boiling water to jelly powder in medium bowl; stir 2 min.
- until completely dissolved.
- Add enough cold water to ice to measure 3/4 cup; stir into jelly until ice is completely melted.
- Pour 1/2 cup jelly into small bowl.
- Add Cool Whip; stir with whisk until well blended.
- Refrigerate remaining jelly 5 min.
- or until thickened.
- Stir in 3/4 cup raspberries and 2 Tbsp.
- blueberries.
- Layer biscuit crumbs, fruited jelly mixture and Cool Whip mixture alternately in 4 parfait glasses or dessert dishes.
- Top with remaining fruit.
- Refrigerate 30 min.
