Garden Slaw With Tarragon
- 14 cup low-fat buttermilk
- 3 tablespoons light mayonnaise
- 1 tablespoon fresh lemon juice
- 2 teaspoons sugar
- 14 teaspoon salt
- 14 teaspoon fresh coarse ground black pepper
- 3 cups sliced savoy cabbage
- diagonally cut wax beans, steamed
- 12 cup snow peas, trimmed and cut lengthwise into thin strips
- 12 cup red bell pepper, strips
- 13 cup shredded carrot
- 14 cup vertically sliced red onion
- 1 tablespoon chopped fresh tarragon
- To prepare dressing, combine first 6 ingredients, stirring with a whisk.
- To prepare salad, combine cabbage and remaining ingredients in a large bowl.
- Add dressing mixture, tossing to combine.
- Chill 30 minutes.
