Potato Scones
- 1 cup flour
- 1 tablespoon sugar
- 2 12 teaspoons baking powder
- 4 tablespoons margarine or 4 tablespoons butter
- 1 cup warm mashed potatoes
- 1 egg
- 14 cup buttermilk
- 14 cup finely chopped watercress leaf
- Sift dry ingredients together cut in margarine/butter.
- Blend in potatoes and watercress.
- Beat egg with buttermilk and add to mixture.
- Rll out dough 1/2 inch thick, using enough extra flour to keep it from sticking.
- Cut in triangles.
- Bake at 400F for minutes.
