Soba Soup With Spinach

  1. In a large saucepan, heat oil over medium.
  2. Add mushrooms, scallion whites, garlic and ginger; season with salt.
  3. Cook, stirring occasionally until mushrooms are tender, appproximately 6 minutes.
  4. Add broth and 3 cups water; bring to a boil.
  5. Add soba; reduce to a simmer and cook 5 minutes.
  6. Add spinach; cook just until tendder, about 1 minute.
  7. Add lime juice and soy sauce.
  8. Serve topped with the green scallions.
