Edamame and Shrimp Salad
- 1 lb shrimp, cooked and shelled
- 1 (12 ounce) package edamame, shelled
- 3 -4 green onions
- 1 cup whole grains and sesame pilaf mix, like Kashi
- 12 lemon, juiced
- 2 teaspoons olive oil
- 2 dashes Tabasco sauce
- 18 teaspoon salt
- fresh ground pepper
- 14 cup low-fat white cheddar cheese, grated
- Cook the edamame in the microwave.
- Toss the first nine ingredients together.
- Garnish with grated cheese.
