Whole Wheat Banana Bread
- 1 1/4 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. sugar
- 1/4 c. vegetable oil
- 1 egg
- 1 tsp. vanilla extract
- 1 c. mashed ripe banana (about 2 medium)
- Combine first 4 ingredients in a small bowl; stir well and set aside.
- Combine sugar and oil; beat at medium speed 2 minutes or until well blended.
- Add the egg and beat until light and lemon colored.
- On low speed of the mixer, add the flour mixture alternately with the banana, beginning and ending with the flour mixture.
- Blend well after each addition.
- Stir in the vanilla. Pour the batter into a bread pan coated with vegetable cooking spray; bake it at 350u0b0 for 45 minutes.
- Yields 16 servings at 120 calories per 1/2 inch slice.
