Goat Cheese and Onion Tart
- 1- 1/2 ounces, weight Butter
- 1 pound, 1-23 ounces, weight Onions, Sliced In Thin Slices
- 2 cloves Garlic
- 1 Tablespoon Chopped Fresh Thyme
- Salt And Pepper, to taste
- 8 whole Sheets Of Puff Pastry (about 350 Grams)
- 1 Tablespoon Flour, For Dusting
- 7 ounces, weight Goat Cheese
- 1.
- Heat the butter on a low heat and add the onion, garlic and thyme.
- Fry for 20-25 minutes until the onions are soft and golden in colour.
- Season to taste with salt and pepper and leave to cool.

- I use small sheets of puff pastry.
- If you have one large sheet, cut out 8 squares (10 cm).
- 3.
- Divide the onion mixture over the 8 squares, leave a small line clear along the edges.
- Cut the goat cheese in 8 pieces and add one piece to each square.
- 4.
- Pop the squares on an oven tray and in a preheated oven (220 degrees C) and bake for 12-15 minutes.
- You will see the sides rise and the goat cheese will colour on top.
