Goat Cheese and Onion Tart

  2. Heat the butter on a low heat and add the onion, garlic and thyme.
  3. Fry for 20-25 minutes until the onions are soft and golden in colour.
  4. Season to taste with salt and pepper and leave to cool.
  5. 2.
  6. I use small sheets of puff pastry.
  7. If you have one large sheet, cut out 8 squares (10 cm).
  8. 3.
  9. Divide the onion mixture over the 8 squares, leave a small line clear along the edges.
  10. Cut the goat cheese in 8 pieces and add one piece to each square.
  11. 4.
  12. Pop the squares on an oven tray and in a preheated oven (220 degrees C) and bake for 12-15 minutes.
  13. You will see the sides rise and the goat cheese will colour on top.
