Roasted Halibut with Grapefruit Salsa

  1. Heat oven to 450 degrees F. Cut away the peel and pith from 2 large red or pink grapefruit; cut segments into a bowl; snip segments into smaller pieces.
  2. Add juice from membranes, chile, onions, basil, and thyme.
  3. Brush the halibut fillets with vegetable oil and season with salt and pepper.
  4. Roast on a baking sheet lined with parchment paper or nonstick foil 10 to 12 minutes, until cooked through.
  5. Spoon salsa over fish.
