Roasted Halibut with Grapefruit Salsa
- 2 large red or pink grapefruits
- 1 red Fresno or jalapeno chile
- 3 tbsp. diced red onion
- 2 tbsp. slivered fresh basil leaves
- 1 tsp. thyme
- 4 1-inch-thick halibut fillets
- vegetable oil
- salt
- Pepper
- Heat oven to 450 degrees F. Cut away the peel and pith from 2 large red or pink grapefruit; cut segments into a bowl; snip segments into smaller pieces.
- Add juice from membranes, chile, onions, basil, and thyme.
- Brush the halibut fillets with vegetable oil and season with salt and pepper.
- Roast on a baking sheet lined with parchment paper or nonstick foil 10 to 12 minutes, until cooked through.
- Spoon salsa over fish.
