Crunchy Yummy Salad (Fennel and Apple Salad)

  1. In a small bowl combine lemon juice and yogurt, set aside.
  2. Finely slice the fennel.
  3. I used a mandolin.
  4. Halve and core the apple.
  5. Leaving the skin on, finely slice it.
  6. I used a mandolin for this as well.
  7. In large bowl combine the fennel, apples, and walnuts.
  8. Pour dressing over the fennel mixture and toss to coat.
  9. Chill until ready to serve.
