Curried Thai Pork
- 1 lb. (450 g) pork tenderloin, cut into bite-size pieces Safeway 1 lb For $3.99 thru 02/09
- 1 each green and red pepper, coarsely chopped
- 1 onion, coarsely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/3 cup Philadelphia Light Cream Cheese Product
- 1 Tbsp. Thai green curry paste
- 1/2 cup lite coconut milk
- 1/2 cup water
- 1 cup snow peas
- 2-2/3 cups hot cooked long-grain brown rice
- 1/4 cup chopped fresh cilantro
- Cook and stir meat in large skillet sprayed with cooking spray on medium-high heat 4 min.
- or until evenly browned.
- Add peppers and onions; cook 4 to 6 min.
- or until crisp-tender, stirring constantly.
- Add next 4 ingredients; cook 3 min.
- or until cream cheese product is melted, stirring constantly.
- Bring just to boil; simmer on medium-low heat 8 min.
- or until meat is done, stirring frequently.
- Add snow peas; cook and stir 2 min.
- Serve over rice; top with cilantro.
