Pasta with Shrimp, Dill, and Lemon
- 1/2 pounds Rotini Or Pasta Of Your Choice
- 1/2 pounds Salad Size Shrimp
- 1/2 cups Light Mayonnaise
- 2 Tablespoons Dried Dill (or Fresh If Available)
- Juice Of One Lemon
- Salt And Pepper, to taste
- Prepare pasta according to package directions.
- If shrimp are frozen, run under cold water until defrosted.
- Drain pasta and run under cold water.
- Add remaining ingredients to pasta and stir to combine.
- Serve as is or chill in the fridge prior to serving.
- A note on the salad size shrimp: I use Legal Seafoods salad sized shrimp that can be found at BJs.
- I get several meals out of one bag.
