Bean Thread Noodles With Shiitake And Vegetables Recipe

  1. In a bowl soak noodles in hot water to cover 15 min.
  2. Drain noodles and cut into 3- to 4-inch lengths.
  3. In a large heavy saucepan cook mushrooms, onion, and gingerroot in oil over moderate heat, stirring, till mushrooms are tender.
  4. Add in broth, water, carrot, noodles, and salt to taste and simmer, stirring occasionally, till liquid is absorbed, about 5 - 10 min.
  5. Stir in scallions.
  6. Serves 6.
