How To Roll A Burrito

  1. Heat a cast iron skillet over medium.
  2. Add oil just to coat the pan.
  3. When the pan just barely begins to smoke, lay a tortilla to cook.
  4. Gently toast your tortilla on both sides.
  5. Remove to a clean surface.
  6. Arrange your chosen filling materials in the center of your tortilla.
  7. Fold down the sides as shown.
  8. Now for the tricky part.
  9. The goal is to minimize tortilla on tortilla contact so that no one bite of burrito contains too much tortilla.
  10. As you roll, you want to press the burrito's contents down the length of the tortilla, forming a barrier between inner and outer tortilla, as shown.
