Chicken Cheese Soup
- 1 c. diced carrots
- 1/2 c. diced green pepper
- 1/2 c. diced chopped onion
- 1/2 c. flour
- 3 c. Velveeta cheese
- 1 Tbsp. basil
- salt to taste
- 2 1/2 c. chicken, boned and cubed or 1 whole chicken
- 1 c. white wine or beer
- 1 c. diced potatoes
- 1/2 c. diced celery
- 3 c. chicken broth
- 2 c. milk
- 1 Tbsp. parsley
- 1/4 Tbsp. paprika
- 2 Tbsp. lemon herb
- 1/2 c. sour cream
- Cook vegetables until tender in
- 4 to 5 tablespoons butter or broth.
- Add chicken broth and pepper and simmer for 30 minutes. Blend flour, milk, cheese and parsley into a smooth sauce and add to broth.
- Cook, stirring, until thick and bubbly.
- Add remaining ingredients.
