Diet Pineapple Bread Recipe
- 2 c. sifted flour
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1/2 c. (12 pkgs.) sugar substitute
- 1 egg, beaten
- 1 teaspoon vanilla
- 2 tbsp. vegetable oil
- 1 c. crushed pineapple, packed in unsweetened juice (don't drain)
- 1 c. raisins
- 1/2 c. nuts
- Preheat oven to 350 degrees; grease 8 1/2 x 4 1/2 inch loaf pan.
- Sift flour with soda and salt into mixing bowl.
- Stir in sugar substitute.
- Combine egg, oil and vanilla.
- Add in to dry ingredients along with pineapple.
- Stir.
- Mix in raisins and nuts.
- Spread proportionately in pan and bake 45 min.
- Store in refrigerator overnight for easier slicing.
- Makes 34 quarter-inch slices, 53 calories per slice.
