Lemon Ice Box Pie

  1. Mix graham crackers and margarine; spread evenly into 9 inch pie plate.
  2. Bake at 350F (180C) for 10 to 12 minutes.
  3. Cool.
  4. Prepare pudding according to package directions.
  5. Bring lemon juice and rind to a boil; dissolve jello in lemon juice.
  6. Add this mixture to pudding and mix well.
  7. Cool.
  8. Spoon into crust.
  9. Chill.
  10. Note: You can always make mini tarts or pies with the very same recipe.
  11. Decorate with meringue topping or whipped cream if desired.
