Shredded Wheat Ginger Peach Crisp
- 4 fresh peaches, peeled and sliced
- 1/4 cup packed brown sugar, divided
- 2 tsp. lemon juice
- 1/2 tsp. ground ginger
- 1 cup bite-size shredded wheat cereal, crushed
- 3 Tbsp. trans fat free canola-based soft margarine
- 16 fl oz (2 cups) fat-free milk
- Mix peaches, 2 Tbsp.
- of the sugar, lemon juice and ginger in large bowl.
- Blend cereal with remaining sugar and margarine in large bowl until well mixed; set aside.
- Spread peach mixture in ungreased microwavable baking dish.
- Microwave on HIGH 30 sec.
- Sprinkle evenly with cereal topping.
- Microwave on HIGH additional 30 sec.
- Divide evenly into 4 servings.
- Serve each person a 4 fl oz (1/2 cup) glass of milk.
