Peanut Sesame Noodles
- 23 cup peanut butter (not natural)
- 1 tablespoon garlic
- 1 tablespoon ginger
- 4 tablespoons low sodium soy sauce
- 3 tablespoons Thai sweet chili sauce (mae ploy)
- 2 tablespoons dark brown sugar
- 1 teaspoon hot sesame oil
- 2 teaspoons sambal oelek (chili garlic paste)
- 1 tablespoon cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 lime, juice of
- 12 cup chicken broth
- 12 ounces thin spaghetti noodles (or udon, 2 packs of ramen, Chinese noodles can be substituted)
- Boil noodles until done in water with 2 tablespoons soy sauce instead of salt.
- Drain and chill.
- Combine the rest of the ingredients in a sauce pot and simmer until thickened, 5 to 10 minutes.
- Toss with noodles and chill until time to serve or enjoy warm.
