Pasta, asparagus and potato salad

  1. Cook pasta, drain well, and toss with oil, salt and pepper.
  2. Cook potatoes in boiling salted water for 10-12 minutes.
  3. Drain potatoes and toss with the pasta.
  4. Trim asparagus and cut into one-inch lengths.
  5. Blanch in boiling salted water for 6 minutes until bright green and still crunchy.
  6. Plunge asparagus into cold water and allow to cool.
  7. Drain and dry.
  8. Toss asparagus in with potatoes and pasta, and season.
  9. Sprinkle parmesan generously over the top.
