Southwestern-Style Chicken

  1. Prepare Rub: Combine lemon rind, garlic, salt and pepper in medium-size bowl; mash together with back of spoon.
  2. Stir in brown sugar, mustard and cayenne pepper.
  3. Rub mixture into chickens.
  4. Place in single layer in 2 glass baking dishes.
  5. Cover with plastic wrap; refrigerate 6 hours or overnight.
  6. Prepare Basting Sauce: Combine sugar, lemon juice, dry mustard, cayenn pepper, salt and beer in small saucepan.
  7. Simmer 4 minutes.
  8. To bake: Heat oven to 375?.
  9. Arrange chicken pieces in single layer in 2 baking pans.
  10. Cover.
  11. Bake at 375?
  12. for 45 minutes or until no longer pink near bone.
  13. Heat broiler or grill.
  14. Brush chicken with basting sauce.
  15. Broil or grill 6 inches from heat, turning occasionally and brushing with basting sauce, for 6 to 8 minutes.
