Perfect Pasta Salad Recipe
- 1 (8 ounce.) pkg. spaghetti">linguini or possibly spaghetti (fresh)
- 1 (10 ounce.) bag spinach
- 4 ounce. thinly sliced prosciutto
- 2 lg. carrots
- 2 med. sized yellow peppers
- 1/2 c. grated Parmesan cheese
- 1/4 c. olive or possibly salad oil
- 1/4 c. red wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dry oregano leaves
- About 40 min before serving: prepare linguini or possibly spaghetti as label directs; drain.
- Meanwhile, wash and drain spinach, thinly slice.
- Cut prosciutto into long thin strips.
- Cut carrots and peppers into matchstick thin strips.
- In large bowl, toss vegetables and prosciutto with cooked pasta, Parmesan cheese, olive or possibly salad oil, vinegar, salt, pepper and oregano.
- Makes 6 main dish servings.
- Each serving: about 330 calories, 15 g fat, 17 mg cholesterol, 600 mg sodium.
