Perfect Pasta Salad Recipe

  1. About 40 min before serving: prepare linguini or possibly spaghetti as label directs; drain.
  2. Meanwhile, wash and drain spinach, thinly slice.
  3. Cut prosciutto into long thin strips.
  4. Cut carrots and peppers into matchstick thin strips.
  5. In large bowl, toss vegetables and prosciutto with cooked pasta, Parmesan cheese, olive or possibly salad oil, vinegar, salt, pepper and oregano.
  6. Makes 6 main dish servings.
  7. Each serving: about 330 calories, 15 g fat, 17 mg cholesterol, 600 mg sodium.
