Baked Chicken Strips
- 1 cup Panko Crumbs
- 1/4 cups Parmesan Cheese, Grated
- 1 teaspoon Parsley, Dried
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 2 whole Eggs
- 1 Tablespoon Dijon Mustard
- 1/2 teaspoons Hot Sauce, Optional
- 2 whole Boneless, Skinless Chicken Breasts
- Heat oven to 400 degrees F. Line a baking sheet with tinfoil and spray with nonstick cooking spray.
- In a shallow dish mix the panko, grated cheese, parsley and salt and pepper together.
- In another dish whisk eggs, dijon mustard and hot sauce.
- Cut your chicken into strips, dry with a paper towel.
- Dip the strips in the egg mixture to coat, then dip into panko crumbs and press on to coat.
- Place strips on prepared pan.
- Cook for 20-25 minutes until cooked through and brown.
- Serve with your favorite dipping sauce.
