Lamb Skewers with Peach & Mint Salsa
- 500g lamb leg steaks, cut into 2-3cm cubes Safeway 1 lb For $5.99 thru 02/09
- 1/4 cup KRAFT FREE Honey Soy Dressing
- 1 peach, halved, skin removed and finely chopped
- 1/2 Lebanese cucumber, finely chopped
- 1/4 small red onion, finely chopped
- 1 tablespoon mint leaves, shredded
- 2 tablespoons KRAFT FREE Honey Soy Dressing, extra
- 1/3 cup natural yoghurt
- Soak 8 bamboo skewers in water for 20 minutes.
- Thread lamb onto skewers and coat in the dressing.
- Allow to marinate for 20 minutes.
- Combine the peach, cucumber, onion, mint and extra dressing.
- Cook lamb skewers on a preheated grill plate for 6-8 minutes, turning during cooking.
- Serve with salsa and a dollop of yoghurt.
