Lamb Skewers with Peach & Mint Salsa

  1. Soak 8 bamboo skewers in water for 20 minutes.
  2. Thread lamb onto skewers and coat in the dressing.
  3. Allow to marinate for 20 minutes.
  4. Combine the peach, cucumber, onion, mint and extra dressing.
  5. Cook lamb skewers on a preheated grill plate for 6-8 minutes, turning during cooking.
  6. Serve with salsa and a dollop of yoghurt.
