Pork Artichoke and White Bean Stew

  1. Combine all ingredients except artichokes, cornstarch, water, salt and pepper in slow cooker; cover and cook on low for 6-8 hours, adding artichoke hearts during the last 30 minutes.
  2. Turn heat to high and cook 10 minutes; stir in combined cornstarch and water, stirring 2-3 minutes.
  3. Season to taste with salt and pepper.
