Tuna and tomato sandwich
- 2 cup canned tuna
- 1 large egg
- 1 tsp sweet basil
- 1 tbsp xanthan gum
- 1/2 tsp dill weed
- 1/2 tsp cilantro
- 1/2 cup grated parmesan cheese
- 2 medium tomatoes
- 1 salt and pepper
- 1/4 cup vegetable oil
- 1/4 cup lime juice
- 1 large poached egg
- Drain the tuna
- Put tuna, egg, basil, dill weed, xanthan gum, and cilantro into a bowl.
- Mix well.
- Then add parmesan cheese mix and form into a thin patty
- Take a pan add oil fry the patties fry till done and a bit crispy.
- Move to paper towels to absorb excess oil.
- Take half the patties set on plates.
- Slice the tomatoes and put a slice on each patty and egg.
- Salt and pepper to taste.
- Cover with the other half of patties.
- Squeeze lime juice over the top of sandwiches.
- Add a little garlic if you like
