Caramelized Apple And Onion Compote Recipe
- 3 x gala apples, sliced
- 1 x yellow onion, sliced
- 3 x garlic cloves, minced
- 2 x shallots, minced
- 3/4 c. sherry wine vinegar
- 3/4 c. vegetable stock
- 2 Tbsp. sugar Healthy pinch of salt and pepper Healthy pinch of fresh thyme, rosemary and parsley
- Start with a pretty warm pan.
- Throw the first 4 ingredients into the pan, with some extra virgin olive oil.
- Put the sugar in the pan to start the caramelization process.
- When the apples and the onion start turning a nice golden brown color, deglaze the pan with vinegar.
- Let simmer for a few min and add in the stock, salt and pepper and the herbs.
- Simmer till the mix becomes thick.
- It will become thicker as it stands.
- Serve with pork, or possibly any other meat.
