Irvixen's Shrimp Scampi
- 1 1/2 lb Frozen, cooked, shelled shrimp
- 1/4 cup Butter, cubed
- 1/4 cup Olive oil
- 6 Garlic cloves, minced
- 2 tbsp Dried parsley
- 1 tsp Lemon zest
- 1/4 tsp Each, salt and pepper
- 1 Parmesan cheese, optional
- Thaw shrimp, rinse and pat dry.
- (I just run it under cold water for a few minutes)
- In 13x9 inch pan, combine butter, oil and garlic (I use the pre-minced garlic, saves time).
- Broil for 4-5 inches from heat for 2 minutes
- Add shrimp, parsley, lemon, salt And pepper.
- Toss to coat.
- Broil for 2 minutes, flip shrimp and broil another 1-2 minutes.
