Peach, prosciutto and artichoke salad
- 120g thinly sliced prosciutto
- 160g ciabatta, cut into large croutons
- 400g can artichoke hearts, drained and halved
- olive oil spray
- salt and pepper, to taste
- 150g mixed lettuce leaves
- 2 peaches, sliced
- 1/3 cup KRAFT Balsamic Italian Dressing
- Place prosciutto, croutons and artichoke hearts on baking paper on a large tray.
- Spray croutons and artichoke with oil spray and season.
- Bake at 180 degrees C for 10 minutes.
- Remove prosciutto, break into pieces and set aside.
- Continue baking croutons and artichoke for 5 minutes or until golden.
- Allow to cool.
- Arrange the mixed lettuce, croutons, artichokes, prosciutto and peach slices on serving plates.
- Drizzle with dressing and serve immediately.
