Peach, prosciutto and artichoke salad

  1. Place prosciutto, croutons and artichoke hearts on baking paper on a large tray.
  2. Spray croutons and artichoke with oil spray and season.
  3. Bake at 180 degrees C for 10 minutes.
  4. Remove prosciutto, break into pieces and set aside.
  5. Continue baking croutons and artichoke for 5 minutes or until golden.
  6. Allow to cool.
  7. Arrange the mixed lettuce, croutons, artichokes, prosciutto and peach slices on serving plates.
  8. Drizzle with dressing and serve immediately.
