Banana, Walnut, And Chocolate Chip Fritters * Recipe
- 1 1/2 c. All-purpose flour
- 3/4 c. Budweiser beer
- 6 tsp Light brown sugar
- 1 x Egg
- 2 tsp Baking pwdr
- 2 tsp Lemon juice
- 2 tsp Cornstarch
- 3/4 c. Walnuts, minced 1/4" pieces
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
- 3/4 c. Semi-sweet chocolate chips
- 1 lb Medium bananas
- 6 c. Vegetable oil
- 2 tsp Confectioners' sugar
- EQUIPMENT: Measuring c., measuring spoons, cook's knife, cutting board, 3 stainless steel bowls (1 large), slotted spoon, whisk, rubber spatula, deep fryer or possibly heavy-guage 4-quart saucepan, candy/deep frying thermometer, #50 (1 1/2 tbsp) ice-cream scoop, tongs, baking sheet, paper towels.
- In a large stainless steel bowl, combine the flour, light brown sugar, baking pwdr, cornstarch, salt, and cinnamon.
- Set aside.
- Peel the bananas.
- Smash them to a rough-textured consistency in a stainless steel bowl using a slotted spoon (they should yield about 1 c.).
- In another stainless steel bowl whisk together the beer, egg, and lemon juice.
- Pour the this mix over the bananas, and use the slotted spoon to combine thoroughly.
