Three Bean Chili Recipe

  1. In a Dutch oven cook garlic in warm extra virgin olive oil for 30 seconds.
  2. Stir in undrained tomatoes, water, tomato paste, chili pwdr, mustard, basil, oregano, cumin and pepper.
  3. Add in 3 cans of beans, bring mix to boiling.
  4. Reduce heat and simmer, covered for 10 min.
  5. Stir in minced carrots, corn and zucchini.
  6. Simmer, covered for 10 min more.
  7. Add in warm pepper sauce to taste.
  8. Spoon into serving bowls.
  9. Top each serving of chili with 2 Tbsp.
  10. of fresh Parmesan cheese and fresh green chili pepper.
  11. Serves 6.
