Wisconsin Cheddar and Beer Spread
- 1 bottle (12 Oz.) Beer, Leinenkugel's Or Your Favorite
- 8 cups (1-1/2lbs) Sharp Cheddar Cheese, Grated
- 3/4 cups Bleu Cheese, Grated
- 1 teaspoon Dry Mustard
- 1/2 teaspoons Salt
- 2 Tablespoons Butter
- 1 teaspoon Worcestershire Sauce
- 1/2 teaspoons Hot Sauce
- 2 teaspoons Finely Diced Onion
- Open beer and allow to stand while grating cheese and combining remaining ingredients.
- Mix in beer, starting with eight ounces, using a mixer.
- Mix until smooth and creamy.
- Add more beer as needed.
- Pack into a container; cover and refrigerate.
- Bring to room temperature when serving with crackers, bagel chips or hearty bread.
- Makes four cups.
