Yummy Scrummy Cupcakes
- 200 g unsalted margarine (softened,room temperature)
- 200 g caster sugar (or granulated, your choice)
- 3 eggs (separated)
- 200 g plain flour
- 2 teaspoons vanilla, escence
- 1 teaspoon baking powder
- Take the softened butter and caster sugar, then cream them together till pale and fluffy.
- Beat the egg whites until half way between egg whites and soft peaks.
- Then beat the yolks.
- Add the two eggs together and stir into the butter mixture bit by bit.
- Sieve flour and baking powder into the mixture-folding it with a wooden spoon.
- Spoon the mixture into paper cases, filling them to about half way.
- Pop into the oven an bake for 15-20 minutes.
- Enjoy.
