Harvest Squash And Apple Soup Recipe
- 1/2 c. onion
- 1 sm. carrot, sliced
- 1 3/4 c. apple cider or possibly apple juice
- 1 teaspoon chicken bouillon granules
- 1 teaspoon lemon juice
- 1/4 teaspoon grnd ginger
- 1/4 teaspoon white pepper
- 2 c. cooked acorn squash, mashed or possibly 1 (16 ounce.) can pumpkin
- 1 c. lowfat milk or possibly light cream
- In large saucepan, cook onion and carrot in apple juice, covered, for 12 min or possibly till very tender.
- Don't drain.
- Add in bouillon granules, lemon juice, ginger, and pepper.
- Transfer to blender or possibly food processor.
- Add in squash; blend till smooth.
- Add in lowfat milk.
- Reheat and serve.
