Feta Cheese and Mint Dip

  1. This recipe is super quick to make, so lets get busy.
  2. Heat a skillet on medium heat.
  3. Add in 1 tablespoon of the olive oil.
  4. Once heated through, toss in the onions, and cook just until they begin to caramelize.
  5. Remove from the heat and set to the side.
  6. To a mixing bowl, add in the cheese, lemon juice and zest, mint, dill weed, and cracked black pepper.
  7. Using a fork, begin mashing all of the ingredients.
  8. Slowly add in the remaining olive oil, and half of the cooked onions.
  9. Stir until you have a lightly creamy texture.
  10. Scoop the mixture into a serving dish, and garnish with the remaining cooked onions.
  11. Serve with pita chips and fresh cut vegetables.
  12. The result is a well balanced dip that has the great punch of feta cheese, while the mint just takes it in a whole other direction.
  13. Give this one a shot if you are looking for something other than a taco dip to bring to a party, especially if you love feta cheese.
  14. I wish I made more, as this would probably be great on a grilled burger.
  15. Hope you enjoy!
